Pears

I dont know about you, but I'm needing a tiny little bit of help to get through the end of the pear season. There are only so many that the kids will eat after a while. Here is a great spiced pear cupcake/muffin recipe, passed down to me, that transforms pears into a wonderful treat ... well they are certainly disappearing quicker than the ones in the fruit bowl.

Cream 125g of butter and 175g of sugar (your choice of white or brown) and 1tsp of vanilla extract until pale. Add 2 eggs slowly then fold in 175g of self raising flour, add the cooled pears, and then 40mls milk with a large metal spoon.

Spoon mixtures into paper cases until 3/4 full, and bake in a preheated 180 degree oven for 15-20 minutes (check at 12 minutes to see if they are risen and springy).

Take cupcakes out of the oven, leave to rest in a tray for 5 minutes then drizzle with the pear poaching liquid. Leave them to cool and then, if you wish to turn them into cupcakes, you can pipe a swirl of your prefered icing on top and finish with a few flaked almonds.
